In the quest to simply life without giving up a good dinner, I’ve been trying to become more of a planner. I give myself Sunday evening to prepare for the week ahead, and try and keep the meals I choose as easy as possible so that I don’t get derailed come Tuesday. The catch is to keep them interesting as well so that it’s a dinner you can’t wait to come home to, even when faced with the siren song of takeout.
Monday: Alton Brown’s Chicken Piccata with Garlicky Cauliflower Mash
Tuesday: Steak and Chimichurri with Crispy Fried Potatoes
Wednesday: Shrimp Pad Thai
Friday: Shanghai Chicken Wings
This week, I’m doing a little something different in the name of saving time and sanity in the kitchen – I’m trying one of Sunbasket’s meal kits out! If you haven’t heard of them, they’re one of the many meal kit delivery services out there that seemingly keep popping up overnight. They promise easy chef designed and nutritionist approved recipes delivered to your doorstep, so I’m curious to see how it goes.
