In the quest to simply life without giving up a good dinner, I’ve been trying to get more into meal planning. I give myself Sunday evening to prepare for the week ahead, and try and keep the meals I choose as easy as possible so that I don’t get derailed come Tuesday. The catch is to keep them interesting as well so that it’s a dinner you can’t wait to come home to, even when faced with the siren song of takeout.
Meal planning for the week after Thanksgiving can be complicated. You might think you have so many leftovers that you won’t possibly need to cook for another two weeks. Or you might be more like me: after reheating yet another plate of stuffing doused in gravy, I find myself craving fresh flavors and vegetables that still have some fight left in them. You know the kind I mean – dishes like curries tinged with peppery herbs and greens, or stir-fried root vegetables paired with smoky bacon. You’re probably also looking for meals that call for as little work as possible, especially if you (like me) were the sole preparer of Thursday’s feast. Thanks to a tendency to hoard pantry staples, I built this menu around the warm spices, pastas and hearty vegetables I always seem to have stashed away this time of year. Whether you’re fresh out of leftovers or are looking to pawn off all that green bean casserole on someone else, I hope there’s some inspiration here for you!
